The Scottish Borders Junior Chef Callenge
- a Master Chef like competition -
Created by Will Haegeland and Trond Dalby for junior chefs in the Scottish Borders. The competition has been made possible due to support from Sarah Dalrymple, The Southern Reporter, the Borders arm of Scottish Chamber of Commerce and Chef Tom Kitchin.
The Junior element relates to the chef's level of experience in professional cookery and not age.
The panel of judges consists of: Sarah Dalrymple - an internationally experienced chef and hospitality assessor, Sandy Neil - an experienced food writer and food lover Sally Scott-Aiton from Scottish Bordes Chamber of Commerce.
The winner -
our own Jonathan Streets
:
Jonathan Streets, 25 year old from Melrose. He has been with us for just over 1 1/2 years. He started as a kitchen porter and has gradually developed and is just starting SVQ level 3 of professional cookery as a modern apprentice with us.
Jonathan is very passionate about food and was the winner of two internal junior chef challenges that we arranged during the last year. As his employers we think he will become a great chef with some more experience and training.
Here is the menu that made him the Scottish Border Junior Chef 2011:
Creamy goat cheese, parmesan and spinach ravioli on a bed of rocket and spinach salad served with tomato and garlic consommé
Baked tender pork fillet stuffed with pear and butternutsquash wrapped in haggis and puff pastry served with potato and onion rosti and pear and onion veloute'
Vanilla ice-cream wrapped in a strawberry fruit leather, paired with chocolate nougat and a strawberry jelly
On Saturday 22nd October Johnny was invited to do a cookery demonstration at the Peebles Food Festival. Here he is in action at Eastgate Theatre:
